Malakoff, Vinzel Fritter, Cheese Fritters, How to Make Fried Cheese Sticks

What is a Malakoff and where does it come from?

The Malakoffs are a Swiss Recipe that consists in Deep Fried Cheese Sticks. The name comes from the “Fort Malakoff” that defended the city of Sevastopol during the Crimean War between 1853 and 1855. The Battle of Malakoff is a major battle fought between French-British forces against Russia on 8 September 1855 as a part of the Siege of Sevastopol. The Swiss mercenaries from the canton of Vaud (Switzerland) that were hired by Napoleon III brought back a recipe for slices of cheese fried in a pan.

We owe the recipe, as we know it today, to “Ida Larpin” of Bursins (village in the canton of Vaud). Cook at the service of Prince Jerome Bonaparte at the Castle of Prangins, she adapted the recipe for a reception given by the Prince. At the latter’s death in 1891 she made her cousins “Alfred and Rose” the beneficiaries of the recipe. They were then keeper of the restaurant named “L’Ecusson Vaudois” in Eysins (another village in the canton of Vaud).

The recipe has been adapted since then from the Malakoff to a “Cheese Fritter” (or Vinzel Fritter). Both taste awesome, but it is interesting to note that the restaurant “L’Ecusson Vaudois” in Eysins is the place that serves the original Malakoff recipe, which was eaten by the Swiss mercenaries. They figured out how to fry cheese while besieging the “Fort Malakoff”.

So Malakoff or Vinzel Fritter? 

In the original Malakoff cheese sticks are wrapped in a dough whereas in the Vinzel Fritter the cheese is grated, added to a mass and then put on round pieces of toast. If you love pure cheese taste then the Malakoff is for you, if you like cheese but prefer a more digest preparation then you will be a fan of the “Vinzel Fritter”.

How to make fried cheese sticks recipe?

 Ingredients:

  • 400g of Mild Gruyère Cheese or Goat cheese if you are going for goat cheese fritters recipe
  • 3dl of white wine (preferably “Chasselas” grape variety, can be replaced by a dry white wine)
  • 3 eggs
  • 200g flour
  • 1.5dl of milk
  • pepper (for seasoning)

Preparation:

  1. First cut the cheese in sticks, for an appetizer, sticks of the size of a thumb will do, for a main dish obviously longer and wider. Then marinate the sticks in the white wine for 2 to 3 hours.
  2. Beat the egg whites until stiff. In a bowl mix the flour, the 3 egg yolks, and the milk. Stir in the egg whites and season with pepper.
  3. Drain the cheese, pass them in flour then dip them in the batter. Heat the oil to 180°C and dip the battered cheese sticks in the oil.
  4. When they are golden, take them out, drain them, pat them dry with kitchen-paper, and serve hot with green salad. Perfect condiments to accompany the Malakoffs are pickles, pickled onions, mustard. Which concludes the how to make fried cheese sticks recipe part.

2. Vinzel Fritters / Cheese Fritters

How to make fried cheese balls?

Ingredients:

  • 300g of Mild Gruyère Cheese or Goat cheese if you are going for goat cheese fritters recipe
  • 10g of white wine (preferably “Chasselas” grape variety, can be replaced by a dry white wine)
  • 5g of Kirsch
  • 1 eggs
  • 15g flour
  • 1.5dl of milk
  • pepper (for seasoning)

 

Preparation:

  1.  Grate the cheese
  2.  In a bowl mix the grated cheese, the flour, the egg, the white wine, and the Kirsch. (You can add some chopped garlic and pepper depending on your taste…)
  3.  Cut 6 slices of round toast, for a main dish 6.5cm diameter would be perfect, for appetizers you can make them smaller. Spread mustard on the toasts.
  4.  Add the mix on the toast forming smooth domes.
  5.  Heat the oil to 180°C and dip the domes in it.
  6.  When they are golden, take them out, drain them, pat them dry with kitchen-paper, and serve hot with green salad. Perfect condiments to accompany the Malakoffs are pickles, pickled onions, mustard. Which concludes our last part how to make fried cheese balls.
